Occasionally my method of measure is a pinch of this and a handful of that

I made this dish for a pot luck gathering (VSSJ HOLIDAY POTLUCK DINNER, VEGAN BAKE SALE). The dish was good, I had to be there at a certain hour therefore it did not bake as long as I would have liked. Baking a little longer it holds together and it becomes great. Starting with two cups of lentils a hour fifteen to a hour thirty was required. Suggestion would be to check after a hour.


2 cups whole lentils

6 tablespoons flax seeds flour

1 cup warm water

2 tablespoon extra-virgin olive oil

6 garlic cloves (minced) : Approximately 6 tablespoons

2 cup sweet onion (diced)

4 celery

2 stalk green onions

1 cup carrots (medium, grated)

1/3 cup apple sauce chunky or peeled, grated apple

1/2 cups raisins

14 to 16 oz toasted walnuts (roughly chopped)

1 teaspoon salt

ground black pepper (Freshly, to taste)

1/2 cups oats regular, ground into a flour (I placed old fashion oats in food processor till floured)


Glaze:

2 tablespoons ketchup

1 tablespoon BBQ sauce

2 tablespoon balsamic vinegar

2 tablespoon maple syrup

2 tablespoon apple sauce



Cook Lentils, some recipes suggest presoaking

Spread chopped nuts onto a baking pan. Toast till golden perhaps 12 minutes, 12 minutes plus

Let nuts cool

preheat oven to 350 deg F

add oil to skillet or wok bring to temperature. (medium) add onion, green onion and garlic plus pinch of salt cook and stir till onion softens.

Add apple (apple sauce), dried cranberries or raisins, oregano, teaspoon of salt, pepper. Continue cooking

process 2/3 of the lentils forming a paste

combine and mix thoroughly lentils, walnuts, flax, oat flour, with the onion, celery, raisin mixture add salt or and peper to taste, some people suggest ¼ teaspoon of red peper flakes

If mixture is dry add small amount of water couple of tablespoons.

Grease two 9x5 inch loaf pans and line with parchment paper

pack firmly

whisk ketchup, BBQ sauce, applesauce, balsamic vinegar with maple syrup. Apply to top of loaf with pastry brush.

Bake at 350 deg F aprox 60 mintues, till semi-firm to touch.
